Fried eggplant in tomato sauce is a popular recipe in the Balkans.
We carefully select eggplant and tomatoes from the best farmers in the Thracian lowland. We carefully clean them.
We cut the eggplant by hand and spread the pieces with high-quality high-oleic sunflower oil, suitable for heat treatment. It cannot be denied – the taste of fried food is irreplaceable, but we do this using modern technology, in specialized appliances working with hot air and 80 % by – a little fat. The optimal temperature and precise air circulation provide a healthy alternative to frying with oil.
We puree the ripe tomatoes, boil them, add salt and fresh spices to make a delicious tomato sauce.
We manually arrange the “fried“ to golden slices of eggplant and other products. Then we cover them with the tomato sauce prepared earlier. We add roasted red peppers, diced carrots, fresh onions and some garlic.
